During this course, our experienced and much-travelled tutor, John Day, will take you on a gastronomic tour of regional Italian tastes and aromas. Your journey will start with making fresh pasta using a pasta machine and learning how to make tortellini and ravioli. We'll show you how to make antipasti, sauces, and oils and prepare poultry and cured meats. Then, we'll sample some of the sweet treats Italy has to offer by making traditional desserts like Tiramisu and Panna Cotta. You will learn to cook with fresh ingredients, develop your knife skills, and by the end of the course, be able to cook an Italian feast from scratch. Buon Apetito!
There will be practiacal observations, support and guidance from you tutor, as well as taste testing.
There is no formal qualification with this course, but you will have lots of new cookery skills.
Once you have completed this course, you could join one of our other part-time courses, such as curry making or a fish masterclass.
