What will I study?

During this course, you'll learn more about the history of the local fishing fleet and its contribution to the Historic Cinque Ports of Hastings.

The course runs twice a week and covers topics such as buying, preparing, storage, and cooking in a variety of classical ways. We'll also show you how to preserve, marinate and cure.

By the end of the course, you will be able to design and cook with seafood suitable for professional menu's or at home, using only locally sourced seasonal fish.

How will I be assessed?

There will be practiacal observations, support and guidance from you tutor, as well as some written questions.

What qualification will I achieve?

There is no formal qualification with this course, but you will have lots of new cookery skills.

What can I do after completing this course?

Once you have completed this course, you could join one of our other part-time courses, such as Some Like it Hot or our curry masterclasses.
